Apple Pie Cake

Is it a pie or is it a cake? This recipe has all the great taste of apple pie with a sweet cake base rather than having to roll out a pastry crust. Use your favourite pie apples and serve with a scoop of vanilla butterscotch ripple ice cream.

Serves 8

1 cup (250 mL) all-purpose flour
3/4 tsp (4 mL) baking powder
1/2 tsp (2 mL) salt
2 tbsp (25 mL) granulated sugar
1 tsp (5 mL) ground cinnamon
4 cups (1 L) thinly sliced peeled Ontario apples
1 cup (250 mL) granulated sugar
1/2 cup (125 mL) butter, melted
2 Ontario eggs
1 tsp (5 mL) vanilla
Streusel:
1/4 cup (50 mL) each all-purpose flour and granulated sugar
2 tbsp (25 mL) soft Ontario butter

In medium bowl, whisk together flour, baking powder and salt. Set aside.

In large bowl, mix together 2 tbsp (25 mL) sugar and cinnamon. Stir in apples; toss to coat well. Set aside.

In another large bowl, whisk together 1 cup (250 mL) granulated sugar and melted butter. Whisk in eggs and vanilla. Stir in flour mixture just until smooth. Scrape into greased 9-inch (23 cm) springform pan. Spoon apples over batter; pressing into batter slightly.

Streusel: In bowl used for flour mixture, stir together flour and sugar. With two forks, cut in butter until small crumbs. Spoon over apples.

Bake in 350°F (180°C) oven for 45 to 50 minutes or until apples are tender and toothpick inserted in centre comes out clean. Run knife around inside edge of pan; cool on wire rack for 10 minutes. Remove ring from pan.

Tip: Reduce oven temperature to 325°F (160°C) for darker pans.
